The all new Zune restaurant offers guests and locals an outstanding menu featuring Purani Dilli  Kashmiri and Punjabi cuisine
Situated on the second floor of the hotel  the restaurant reflects the pomp and magnificence of a bygone era   The restaurant features a Jamevaar  Ambi  motif  a textile pattern used extensively in ancient Persia to decorate royal regalia  crowns and court garments   Traditional Jamavar shawls hang on the walls   priceless antiques from the owners personal collection   Original Kashmiri artifacts are also featured throughout the dining room   Zune is also one of the first restaurants in the country to offer wazwaan style seating
 Zune aims to bring the refinement and lavish lifestyle of the Mughal court to patrons through its décor  service  linen and attention to detail on every level   says Nishan Silva  Director of Operations
Zune chefs have painstakingly recreated some original recipes from Old Delhi or  Purani Delhi   including pulaos  kebabs and kormas   The restaurant will revive the art of slow cooking and the  dhungar  style of smoking dishes with coal to enhance flavor and aroma
The restaurant also features Kashmiri food   Kashmiri cuisine is characterized by a subtle blending of fragrant spices  such as dry ginger and fennel  and is rich in variety  a traditional waazwan has 36 courses  with an abundant use of saffron  and prepared using slow cooking techniques   The restaurant has two professional Kashmiri cooks who recreate both traditional Pandit and Muslim dishes on the à la carte menu as well as a daily Kashmiri sampler platter   In true Kashmiri style  the restaurant offers a traditional kahva or green tea service at the end of the meal  served from a samovar in specially designed kahva glasses
The Zune menu will also feature old Punjabi or Delhi favourites such as tandoori chicken  butter chicken  parantas  paneer  pickles and the unmistakable influence of Peshawar
 The cuisine created for Zune is based on traditional methods of cooking using fresh and seasonal ingredients blended with the exotic tastes  colors and textures of the spices used   The restaurant is designed to appeal to people who enjoy the entire experience of a cuisine based on traditions   I’m looking forward to seeing the first guests’ reactions to our novel approach to dining   Nishan Silva added
